I
t all started with a pizza from
an episode of
Man V. Food
. Not
just any pizza but a “Colorado
Mountain Pie”. As we stared
lasciviously at this giant pizza pie,
we knew that the Rocky Mountain
state of Colorado was the winning
destination for our next road trip.
When you’re travelling with young
kids, it’s hard to be spontaneous, so I
planned our entire route in advance,
including booking the hotels, mapping
out what we’d want to see and, most
importantly, where we were going to
eat.
Fast-forward six months and we
were Denver-bound with our two
young daughters in tow. Getting to
Denver involved an overnight flight
from Hong Kong to Los Angeles, a
brief six-hour sleep at an LAX airport
hotel, and a two-hour flight to Denver.
We picked up the hire car (always a
tedious wait; bring plenty of activities
to occupy the kids) and headed out
West.
Panning for gems
Faced with a three-hour drive to
our first destination, I had chosen
Idaho Springs to stretch our legs and,
more importantly, visit Beau Jo’s,
home of the famed Mountain Pie.
This Colorado institution was worth
travelling the 7,500 miles for. Our
reward was a cross between a pizza
and a pie, served with honey on the
side for you to dip the crusts in! We
burnt off our gluttonous feast with a
trip to Argo’s Mine, where we kept our
