Chocolate chip muffins

Ingredients

g butter, softened
• 40
g caster sugar
• 1
egg
• 55
g self-raising flour
• 2
Tbsp unsweetened cocoa powder
• 20
g semi-sweet chocolate chips
Method
•
Preheat the oven to 220°C
•
Combine the butter and sugar to create a consistency similar to mashed
potatoes.
•
Add the egg and whisk together well.
•
Add the flour and combine well.
•
Add the cocoa powder and mix together.
•
Add the chocolate chips and mix well together.
•
Place 4 muffin cups into a muffin tray. Divide the mixture into muffin cups.
•
Bake for 15 to 20 minutes.
