Quick Chicken Nuggets
Instead of dipping chicken nuggets in beaten egg and seasoned flour, I coat them in
pesto, which gives them a delicious flavour.

Put the cornflakes into a plastic food
bag. Crush the cornflakes with a rolling
pin tomake fine crumbs. Add the
cheese and add half of the chicken
to the bag. Shake the bag to coat the
nuggets. Transfer the chicken nuggets
onto a plate. Add the remaining
chicken to the bag and repeat.
Lay the nuggets on a baking sheet and
cook in the oven for 10 minutes.
Makes approximately 20 nuggets.

Tbsp pesto
• 50
g cornflakes
• 15
g parmesan, finely grated
Preheat oven to 200˚C.

each breast. Put the chicken into a
bowl. Season, add the pesto and mix
