Ingredients
For the teriyaki baked salmon
• 2 salmon fillets
• 5 tbsp Coconut Aminos Teriyaki sauce
• 1 clove of garlic, minced
• 1 tbsp grated ginger
• 1 tbsp sesame seeds
For the sides
• 2 sweet potatoes
• ¾ cup quinoa
For the lime and miso dressing
• 1 tbsp miso paste
• 2 tsp soy sauce
• 2 tbsp white vinegar
• 1 tbsp grated ginger
• 2 tbsp sesame oil
• 1 tbsp honey
• 1 tsp lime juice
• ½ tbsp dill (chopped)
Method
1. Preheat the oven to 180°C.
2. For the teriyaki salmon: mix all
ingredients together except for the
sesame seeds and coat the salmon
fillets using a brush. If you wish to let
the salmon marinate longer (which will
give it a darker colour and stronger
flavour), place it in a dish, cover it
with cling film and re-coat it with the
marinade mixture from time to time
until ready to cook.
3. Cook the quinoa and the sweet
potatoes according to your usual
cooking.
4.
Place the salmon on a baking dish,
sprinkle with sesame seeds and bake
for 12-15 minutes, depending on your
oven (and how thoroughly you like your
salmon cooked).
5. While the quinoa, sweet potato and
salmon are cooking, prepare the miso
dressing: in a small bowl mix together
all ingredients until smooth and
creamy. Add water to adjust thickness
to your taste.
6. Serve the salmon fillets on individual
plates with sweet potatoes and quinoa
with the miso dressing and dill. Enjoy!
Chocolate cake in a mug
My recipe for chocolate cake in
a mug takes five minutes to make,
from the moment you grab your
tablespoon to mix the ingredients to
the moment you burn your tongue
because you couldn’t wait to taste it.
And the good news is that you only
need a microwave oven, a mug and a
tablespoon (this is a game changer for
a few people I know who do not have
an oven). The recipe is quite versatile –
you can add chopped nuts or seeds,
caramel, chocolate chips, peanut
butter chips… I added chocolate chips
and desiccated coconut and it was
divine (and I burned my tongue). Save
this one in your emergency kit, for rainy
days or low-mood days or for no reason
actually. You don’t have to have a
reason to eat chocolate cake. You’re
welcome.

Ingredients
1 tbsp flour
4 tbsp coconut sugar
1 tbsp cocoa powder
1 egg
3 heaped tbsp dark chocolate chips,
melted
3 tbsp milk
A small splash of vanilla extract
2 tbsp WILD virgin coconut oil
