Method
1. Add the flour, sugar and cocoa

If you are like me and you don’t want
to spend a ridiculous amount of money
on things that you can make yourself
and that taste better, then keep
reading. I had given shop-bought
powder into the mug. Mix in the egg
until well incorporated.
2. Mix in the melted chocolate then the
milk, vanilla and WILD coconut oil.
3. Stir in the chocolate chips,
desiccated coconut and sea salt.
4. Microwave at full power for about 1
minute 30 seconds – not longer – for a
molten effect.
5. Decorate with icing sugar and serve
with a scoop of vanilla ice cream

outrageous price tag, it was not even
good. It tasted like canned coconut
milk that was refrigerated. No thanks.
Since then, I have discovered creamed
coconut (or coconut manna/coconut
butter), and have made the most
awesome creamed coconut yogurt
recipe where I use plain Greek-style
yogurt. It is probably the best yogurt I
have ever had in my entire life (I am not
joking!).
So instead of buying coconut yogurt
with a huge premium, spend that
money on organic Greek-style yogurt
and on good quality ingredients: a
pack of chia seeds will last you for ever
and a 500g jar of creamed coconut will
make on average 10 batches of 500ml
flavoured-yogurt. The mixed yogurt
will keep as long as it is indicated on
the package and you can mix it with
anything you like.
So here is my favourite creamed
coconut yogurt recipe, using chia
seeds, mango and passion fruit. I serve
this with my homemade granola. It
tastes like being on vacation.
Makes 500 ml yogurt
Ingredients
1 500ml carton Greek-style yogurt (or
regular plain yogurt)
A splash of nut milk if you are using
Greek-style yogurt and want to loosen
the mixture
1 tbsp chia seeds
2 tbsp creamed coconut (or to taste)
½ mango, diced
Pulp of 1 passion fruit
Sweetener, such as mild honey,
optional (personally, I find the sugar in
the fruit is enough. Do not use strong
honey as it will override the coconut
flavour)
Method
Mix all the ingredients together and
serve with homemade granola and
extra fresh fruit on top. Easy peasy!
