Apple Sauce
In a blender, combine 3 medium-
sized apples, which have been cored,
until completely puréed and smooth.
If you have a high-speed blender, you
can leave the skins on; if not, peel the
apples first before blending. This will
yield about 1 ½ cups, and you’ll need
1 cup to make these cookies.
Luca’s Oatmeal Raisin
Elf Cookies
Makes 45 cookies
Ingredients
• 2 cups gluten-free flour
• 1 cup gluten-free rolled oats
• 1 ½ cups coconut palm sugar
• ¼ cup ground flax seeds
• ¼ cup ground chia seeds
• 1 ½ tsp baking soda
• 1 tsp high mineral raw salt
• 2 ½ Tbsp ground cinnamon
• ½ tsp ground nutmeg
• 1 tsp xanthan gum
• 2 Tbsp rice milk
• ¾ cup + 2 Tbsp melted coconut oil (I
prefer organic, cold pressed)
• 1 Tbsp vanilla extract
• 1 cup apple sauce (see recipe at right
to easily make your own!)
• 1 cup raisins
Method
• Preheat oven to 180°C/ 355°F.
• In a large bowl, mix all dry ingredients
(except raisins) together well.
• In a medium bowl, combine all wet
ingredients with a whisk until just
combined. (The oil and apple sauce
will stay separate, which is fine.)
• Pour wet ingredients into dry ingredients
and mix extremely well (or use a stand
mixer, if preferred.)
• Fold in raisins until well distributed.
• Drop by rounded tablespoon onto
parchment-lined baking trays, leaving
an inch or so in between each cookie.
• Bake for about 15 minutes, rotating the
pan about halfway through. Ovens
vary, but the cookies should be golden
brown and if you insert a toothpick into
the centre of a cookie, it should come
out dry.
• Allow to cool before serving.
• These cookies will store well in the fridge
in an airtight container for about 2
weeks… if you can resist them that long!
