• 1 tsp caster sugar
• 175g dried pasta
• 2 Tbsp basil, chopped
• Parmesan, for topping
Method
• Heat the oil in a saucepan. Add
the onion and fry for 5 minutes.
Add the garlic and fry for 30 seconds.
Add peppers, tomatoes, tomato
paste, balsamic vinegar and sugar,
and season with salt and pepper.
Bring to a boil, cover and simmer for
5 minutes. Blend using a hand
blender.
• While you are making the sauce,
cook the pasta in boiling water, drain
and add to the sauce with the basil.
Serve with Parmesan.
Roasted Red Pepper and
Tomato Pasta
Makes 3 servings

red peppers and combine with the
tomato sauce.”
Ingredients
• 1 Tbsp olive oil
• 1 onion, finely chopped
• 1 clove garlic or 1 tsp garlic pur ´ee
• 75g roasted skinned red peppers from
a jar, chopped
• 1 x 400g tin chopped tomatoes
• 2 tsp sundried tomato paste
• 1 tsp balsamic vinegar
